Hello everyone! I hope you are all having a wonderful week. I’m so sorry for not posting last week, I was a little stressed and decided to focus on resting. However, I’m back now with new content.
If you have been following me for a while, you would probably know that I love to bake. It’s something that I find to relax and relieve stress (plus you make a yummy treat) This month, my grandparents traveled from France to visit our family in the US.
Every time they visit, my grandfather always orders key lime pie at restaurants. Key lime pie is one of my state’s specialties (and also one of mine haha) because it’s hot 24/7 and is very refreshing. It’s essentially a very fresh, sweet pie that is great for summer days.
When I make this recipe, I only get compliments! Sooooo, I thought I would show/teach you guys my favorite recipe and hopefully, you fall in love with the treat as well!

Without further ado, let’s hop in!
Step 1: The Crust
Preheat your oven to 350°F. In a bowl, mix together the sugar, graham cracker crumbs, and the melted butter. Once done, press the mixture evenly onto the sides and bottom of a 9-inch pan. When the oven is done preheating, bake until golden brown (approximately 10 minutes).
Step 2: The Filling
While the crust is baking, let’s begin on the filling (aka the most important part!) First, start off with beating the egg whites until they hold stiff peaks. I prefer to use a hand mixer for this because it makes the process much easier.
After this, whisk together the egg yolks, the key lime juice, and the sweetened condensed milk. While mixing, gently fold in the eggs whites. Make sure everything is combined.
By this time the crust should be done. Take it out of the oven and let it cool for a couple of minutes. Gently spread the mixture into the crust (make sure the mixture is evenly spread in the pan). Put the pan back in the oven for approximately 20 minutes. Once it’s done, place it in the refrigerator to cool until serving time.
